Ready-made pastry shells make it easy to prepare these empanadas in less than an hour--perfect when unexpected guests drop by or you are looking for a refreshing change of pace for a family dinner. The filling is made with sauteed asparagus and shrimp and a shortcut white sauce made by sprinkling flour into the saute pan and cooking with milk until thickened and creamy. Forming the empanadas is easy to do, just be careful not to overfill.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 wild asparagus
  • 200 grams shrimp
  • 1 tablespoon flour
  • 1 dash milk
  • salt
  • ground black pepper
  • 16 pastry shells
  • 1 egg

Directions

  1. Preheat the oven to 200 degrees Celsius.
  2. Add the oil to a skillet on medium heat. Add the asparagus and saute for a couple of minutes.
  3. Add the shrimp and cook for 1 minute.
  4. Add the flour and continue to cook. Pour the milk in to give the filling a creamy texture. This will help fill the empanadas. Season with salt and pepper.
  5. Place the filling at the middle of each of the shells.
  6. Close the empanada and seal with the egg and using a fork.
  7. Brush egg on top of the empanadas and place on a baking sheet.
  8. Bake for about 15 minutes until golden brown.

These are delicious. They are also elegant and great to serve to company as well as family for dinner. It is amazing to me how my kids will eat things that are in an empanada (for example asparagus) that they wouldn't eat on it's own. Very good recipe, thank you!
