Asparagus and Shrimp Empanadas

Description

Ready-made pastry shells make it easy to prepare these empanadas in less than an hour--perfect when unexpected guests drop by or you are looking for a refreshing change of pace for a family dinner. The filling is made with sauteed asparagus and shrimp and a shortcut white sauce made by sprinkling flour into the saute pan and cooking with milk until thickened and creamy. Forming the empanadas is easy to do, just be careful not to overfill.

Ingredients

1 tablespoon vegetable oil
200 grams shrimp
1 tablespoon flour
1 dash milk
salt
ground black pepper
16 pastry shell
1 eggs

Directions

1Preheat the oven to 200 degrees Celsius.
2Add the oil to a skillet on medium heat. Add the asparagus and saute for a couple of minutes.
3Add the shrimp and cook for 1 minute.
4Add the flour and continue to cook. Pour the milk in to give the filling a creamy texture. This will help fill the empanadas. Season with salt and pepper.
5Place the filling at the middle of each of the shells.
6Close the empanada and seal with the egg and using a fork.
7Brush egg on top of the empanadas and place on a baking sheet.
8Bake for about 15 minutes until golden brown.
