Ingredients

  • 1 tablespoon olive oil
  • 1 onion (finely chopped)
  • potato (slices)
  • asparagus (parboiled)
  • ham slices
  • 6 eggs
  • salt (to taste)
  • ground black pepper (to taste)
  • 8 slices bread (dense)

Directions

  1. Heat the olive oil in a skillet, and saute the onion until translucent.
  2. Add the thinly sliced potatoes, and cook for a few minutes.
  3. Add the asparagus and ham slices, and stir.
  4. Beat the eggs well. Season with salt and pepper to taste, and pour on top of the ingredients in the pan.
  5. Cook the egg on one side. Use a plate to turn the tortilla over, and cook the other side.
  6. Serve with a salad, and dark bread.

I used fresh asparagus for this 5 star recipe and added some extra sea salt to it. I love this recipe I have made it several times now. The potatoes are so tender and the tortilla is nice and crunchy.
