- 1 cup sesame seeds
- 1/2 cup hemp seeds
- 8 garlic cloves
- avocado oil (for garlic)
- coarse salt (for garlic)
- 3 dried red chilies (or less to taste)
- flaky sea salt (such as Jacobson's, for furikake)
- 6 sheets nori
- 2 lb. asparagus
- 1 Tbsp. coarse salt (for asparagus)
- 2 whole medium shallots
- 1 European cucumber (long, slim, and often sold wrapped in plastic)
- 3 inches fresh ginger
- 1 jalapeño
- 2 cups white wine vinegar
- 2 Tbsp. coarse salt (for dressing)
- 2 cups avocado oil (for dressing)
- 3 Hass avocados
- flaky sea salt (for serving)
