  • 180 grams asparagus (green)
  • cream (20 cl. full)
  • 1 teaspoon mustard
  • salt (to taste)
  • ground black pepper (to taste)


  1. 1Wash the asparagus, cut off the tips, and keep the tips for the garnish.
  2. 2Grind the asparagus in the blender.
  3. 3Add the liquid cream, mustard, salt, and pepper. Mix again.
  4. 4Sieve the preparation then pour it into your siphon.
  5. 5Fit the siphon with a gas cylinder and shake several times.
  6. 6Place the siphon horizontally in the refrigerate for a few hours.
  7. 7Put into dessert glasses and garnish with the asparagus tips.
