Asian Sugar Snap Pea Salad with Radishes and Edamame

Ingredients

  • 1 1/2 cups red radishes (trimmed, washed, and cut in half-moon shapes)
  • 3 cups sugar pea (trimmed and cut into diagonal pieces)
  • 1 cup edamame (cooked, shelled)
  • 2 tablespoons sliced green onions (scallions)
  • 1/4 cup peanuts (chopped, for garnish)
  • 1/4 cup soy sauce
  • 1 1/2 tablespoons rice vinegar (not seasoned)
  • splenda
  • sweetener
  • 2 teaspoons stevia
  • 1/2 teaspoon Tabasco Green Pepper Sauce (hot chili oil, or Sriracha sauce, or more to taste)
  • 1 tablespoon sesame oil
  • 2 tablespoons peanut oil
  • 1/2 teaspoon ground ginger (comes in a jar)
  • 2 tablespoons reduced sugar apricot jam (or sugar free)
