Ingredients

  • 4 pounds pork ribs (– separated)
  • 2/3 cup wine
  • 2/3 cup soy sauce
  • 2/3 cup orange juice
  • 3 inches fresh ginger (piece of, – grated)
  • 6 cloves garlic (– sliced)
  • 1 dash sea salt
  • 1 dash freshly ground black pepper
  • olive oil (Drizzles of)
  • 5 pounds potatoes (bag of, – peeled and sliced)
  • 1 dash sea salt
  • 1 dash freshly ground black pepper
  • 1 dash paprika
  • 1 dash chili powder
  • 1 dash garlic powder
  • olive oil (Drizzles of)

Directions

  1. In a large bowl combine all of the ingredients for the marinade and add the ribs. Place in the refrigerator for a few hours. Preheat Oven 350 degrees:
  2. Place the ribs in a baking dish and pour the marinade over them. Place in the oven for about 2 hours or until the marinade has absorbed into the ribs.
  3. Remove from oven and sprinkle a teaspoon of sugar over the ribs for a nice glaze.
  4. Peel and rinse the potatoes. Pat dry, slice and place the potatoes in a bowl. Drizzle olive oil over the potatoes, add the seasonings and toss. Place the potatoes in a baking pan.
  5. Bake for about 1 hour or until golden.
