Pasta doesn’t always have to be smothered in cheese or tomato sauce. This recipe for Asian Pasta with Sauteed Vegetables is hearty, healthy, and perfect for a vegetarian dish any day of the week. Ingredients

- spaghetti (or other preferred pasta)
- 1 carrot
- 1 zucchini
- 1 green bell pepper
- 1 tomato
- 1/4 yellow onion
- soy sauce
- olive oil
- sesame oil
- rice vinegar
Directions
- While the pasta is cooking, wash, peel and slice the vegetables.
- Saute the vegetables in a skillet with a small amount of olive oil on high heat until the edges become brown, turning only once. Don’t worry if they stick to the skillet.
- Add a few drops of soy sauce, sesame oil, and rice vinegar to taste.
- Drain the pasta and add it to the skillet with the vegetables.

Great combination of flavors and textures thanks to the oils, vinegar, and abundance of sauteed veggies. Not only is it really great warm after it's finished cooking, but it also tastes good chilled like a pasta salad. We've had this as a lunch dish, a warm side with dinner, and as a pasta salad at a picnic.
