  • chopped cilantro (Up To 1 Bunch, To Taste)
  • 3 whole scallions (Sliced)
  • 3 whole cucumbers (Peeled And Sliced)
  • 10 ounces whole cashews (Lightly Toasted In Skillet)

  • 8 tablespoons olive oil

    This is a huge, bold salad that could easily be a main course. I substituted gluten free Hoisin and Tamari sauces, Thai brown rice noodles, and toasted almonds. I served this with the Asian barbecued pork. My family loved it
