  • 1 rotisserie chicken (meat pulled off and shredded)
  • 2 heads green cabbage (Chinese, shredded)
  • 2 cups frozen peas
  • 2 carrots (large, shredded)
  • 2 cucumber (diced)
  • 1/2 cup green onions (chopped)
  • 1/2 cup garlic chili sauce (sweet)
  • 6 tablespoons honey
  • 5 tablespoons sesame oil
  • 3 tablespoons vinegar
  • 4 tablespoons lime juice (I used calamansi – yum)
  • 2 teaspoons wasabi paste
  • peanuts (crushed, for topping)

Wow! I made this salad for dinner and had the leftovers the next day for lunch. Absolutely delicious. I didn't change a thing nor would I change a thing. I will definitely be making it again. Yum, yum, yum!
