Directions
- Cook the rice in boiling salted water according to the package instructions. Drain and allow to cool for 15 mins.
- Heat 1 tbsp oil in a pan, season the steak then sear, turning, for 4 mins. Remove from the pan and set aside to rest.
- Place the vinegar and sugar in a bowl and season. Slowly whisk in the remaining oil. Use to dress the rice, pine nuts, arugula, tomatoes, and olives. Top with the steak.
