  • 1 ounce brown rice
  • 2 tablespoons olive oil
  • 2 ounces steak (cut into strips)
  • 1 tablespoon white wine vinegar
  • 1 pinch sugar
  • 2 teaspoons pine nuts (toasted)
  • 1 1/4 cups arugula
  • 2 ounces tomatoes (chopped)
  • 1/2 ounce pitted black olives (sliced)

    Directions

    1. Cook the rice in boiling salted water according to the package instructions. Drain and allow to cool for 15 mins.
    2. Heat 1 tbsp oil in a pan, season the steak then sear, turning, for 4 mins. Remove from the pan and set aside to rest.
    3. Place the vinegar and sugar in a bowl and season. Slowly whisk in the remaining oil. Use to dress the rice, pine nuts, arugula, tomatoes, and olives. Top with the steak.
