  • 2 1/4 teaspoons rapid rise yeast
  • 1 cup warm water
  • 1 pinch sugar
  • 3 1/2 cups all purpose flour (or bread flour)
  • 1 teaspoon salt
  • 1 tablespoon olive oil (divided)
  • 2 tablespoons olive oil
  • 2 cups shredded mozzarella cheese
  • 2 pears (large ripe, cut into thin slices)
  • 1/2 red onion (cut into thin slices)
  • 4 ounces prosciutto (thinly sliced)
  • 1/3 cup crumbled blue cheese
  • 3 cups arugula

    Directions

    1. To make the pizza dough, in a glass measuring cup or small bowl, combine yeast and 1 cup warm water. Add a pinch of sugar and let sit for 5 minutes.
    2. In the bowl of a KitchenAid® Stand Mixer, add the flour and salt. Mix the ingredients until combined. Add the yeast mixture to the flour mixture. Next, add 1 tablespoon of olive oil. Using the beater blade, mix until combined. Switch to the dough hook and knead for 5 minutes on medium speed or until dough is silky and smooth.
    3. Spray a large bowl with cooking spray. Form the dough into a ball and place in the bowl. Cover the pizza dough with a damp towel and set in the KitchenAid® Warming Drawer, set on the bread proof setting. Let the dough rise for 45-60 minutes or until dough has doubled in size.
