Artichokes in a Curry Ginger Sauce

Description

Get a taste of India! If you love foods with a zing, then this recipe is for you. This is a great way to eat artichokes if you don’t like them, as the flavor is greatly masked by the onion, cloves, curry, and ginger. Add more curry if you can stand the heat.

Ingredients

  • vegetable oil
  • 1/2 onions (peeled and minced)
  • 1 garlic cloves (peeled and minced)
  • 8 ounces artichoke hearts (canned, drained, cut in half)
  • 1 tablespoon flour
  • 200 milliliters chicken stock (or water)
  • 1 tablespoon curry powder
  • ground ginger

Directions

  1. 1Saute the onion and garlic in a tablespoon of oil.
  2. 2Once translucent, add the drained and halved artichokes.
  3. 3After 3 minutes, add the flour. Cook for 1 minute, and add the stock.
  4. 4Add the curry powder and a pinch of ginger and simmer 5 minutes.
