This Artichoke and Jicama Tuna Salad is just the right blend of flavor and crunch with only 160 calories per serving. Ingredients include canned tuna, artichoke hearts, jicama, light mayonnaise, red pepper flakes, salt, ground black pepper, lettuce, and broccoli.

Ingredients

  • 5 ounces canned tuna (drained)
  • 1/2 cup artichoke hearts (chopped)
  • 1/2 cup jicama (chopped into cubes)
  • 1 tablespoon light mayonnaise
  • red pepper flakes
  • salt
  • ground black pepper
  • lettuce (washed and chopped)
  • 4 cups broccoli florets (steamed)

Directions

  1. In a bowl, add the tuna, artichoke, jicama, mayonnaise, red pepper flakes, and a pinch of salt and black pepper in a bowl.
  2. Serve the lettuce and broccoli on a plate and then serve the tuna mixture on top of the vegetables.

I have had lots of tuna salads before but nothing can compare to this delicious treat. It was unlike anything else I had ever made before, combining very different flavors and turning them into one fantastic flavor. It was very filling and didn't seem to last very long after I made it. I will make this 5 star recipe again.
