Ingredients

1 tablespoon vegetable oil
1/2 onions (peeled and diced)
2 garlic cloves (peeled and minced)
100 grams ham (Iberian, or prosciutto, diced)
340 grams artichokes (halved)
170 grams rice
1 liter vegetable broth
salt

Directions

1Add the oil to a skillet on medium heat. Saute the onion and the garlic over low heat.
2Add the ham or prosciutto and cook for 2 minutes.
3Add the artichokes and cook for another 2 minutes.
4Add the rice and saute for a few minutes.
5In a separate saucepan, heat the vegetable broth.
6Add the broth to the rice little by little, stirring constantly in order to loosen the starch and achieve a creamy texture. Cook for 15 to 18 minutes.
7Add salt if needed.
