  • 1 Tbsp. coriander seeds
  • 1 tsp. fennel seeds
  • 1/4 tsp. fenugreek seeds
  • 1 cm cinnamon (/½in stick)
  • 2 tsp. chilli flakes (crushed)
  • 4 Tbsp. vegetable oil
  • 1 tsp. black mustard seeds
  • 10 curry leaves (fresh or dried)
  • 1 onion (medium, finely chopped)
  • 2 garlic cloves (crushed)
  • 5 cms fresh ginger (/2in piece, grated)
  • salt (to taste)
  • 550 mL water
  • 2 Tbsp. coriander leaves
  • 2 Tbsp. coconut (fresh, grated, optional, but do not use desiccated)
