  • 1 1/2 cups arepa flour
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 1/2 cups milk
  • 1/4 stick Crisco Baking Sticks All-Vegetable Shortening (OR 1/4 cup Crisco® All-Vegetable Shortening)
  • 3 tablespoons Crisco Pure Vegetable Oil
  • 15 ounces seasoned black beans (heated according to label instructions)
  • 1 cup queso fresco (crumbled)

    Directions

    1. HEAT oven to 300°F. Combine flour, mozzarella cheese, sugar and salt in large bowl. Microwave milk and shortening in medium microwave-safe bowl on HIGH 2 minutes or until mixture just begins to boil. Stir into flour mixture until blended. Knead on lightly floured surface until dough is smooth, about 2 minutes. Shape dough into 10 (2 1/2-inch) patties.
    2. HEAT oil in large nonstick skillet over medium-low heat. Cook arepas in batches, 4 to 5 minutes on each side, until crispy and golden brown. Place on ungreased baking sheet. Bake 10 minutes. Split in half horizontally. Fill with black beans and queso fresco.
