Description

An Indian inspired rice dish featuring saffron and other fresh herbs. Made with basmati rice, this dish includes plump golden raisins for a burst of sweetness and sliced almonds for additional crunch.

Ingredients

  • water (triple the amount of the rice)
  • 1/2 cup olive oil
  • 1 onions (medium)
  • 3 garlic cloves (minced)
  • 2 bay leaves (laurel)
  • 500 grams basmati rice
  • salt (to taste)
  • 1 tablespoon saffron
  • 75 grams sliced almonds
  • 100 grams golden raisins

Directions

  1. 1Bring water to a boil.
  2. 2In a large pan, heat olive oil, onion, garlic, and bay leaves.
  3. 3When the onion begins to brown (keep stirring so that the garlic doesn't burn), add the rice, salt, and saffron. Mix everything, and let the rice fry for 2 to 3 minutes, stirring from time to time.
  4. 4After this time, add a little boiling water to loosen the rice, and then the remaining water. Simmer until cooked. It is important the rice is not too soft.
  5. 5Remove rice from heat, and drain in a large colander. Rinse the rice with cold water, and let cool completely. When cold, put the rice in a serving bowl, and add the flaked almonds and raisins. Mix well to evenly distribute all the ingredients.
  6. 6Serve with meat or fish.
