Ingredients

  • 1/3 cup apricot preserves
  • 1 lemon (zested and juiced)
  • 1 Orange (zested and juiced)
  • 1 tablespoon soy sauce
  • 1 tablespoon ketchup
  • 2 tablespoons fresh parsley leaves (chopped)
  • 1 tablespoon fresh thyme leaves (chopped)
  • 1 rotisserie chicken

Directions

  1. Preheat grill.
  2. Gently heat preserves until melted. Mix in 1 tsp lemon zest, 2 tbsp lemon juice, 1 tsp orange zest, 2 tbsp orange juice, soy sauce, ketchup and herbs.
  3. Arrange chicken in a roasting pan then coat with 1/2 the glaze. Place pan on grill, cover and cook for 5 mins. Brush with remaining glaze and cook for 10 mins, or until heated through.
