  • 1 cup butter (softened)
  • 2/3 cup sugar
  • 2 1/2 cups flour
  • 1/3 cup dried apricots (chopped)
  • 2 tablespoons orange marmalade
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (sifted)
  • 2 teaspoons lemon juice

Directions

  1. Preheat the oven to 350°F. Line 3 baking sheets with parchment paper.
  2. Beat butter and sugar in a large bowl with an electric mixer on medium speed until light and fluffy. Add sifted flour, apricots, marmalade and vanilla; mix until well blended. Refrigerate for 10 mins, until firm.
  3. Roll tablespoonfuls of mixture into balls. Place 1 1/2 inches apart on prepared pans. Flatten slightly using floured fingertips.
  4. Bake for 10-15 mins until golden. Cool on pans for 5 mins. Remove from pans; cool completely on wire racks.
  5. Mix powdered sugar, lemon juice and enough hot water in medium bowl until mixture is smooth and of a spreadable consistency. Drizzle icing over cookies. Let stand until firm.
