  • 1 vidalia onion (medium, – peeled and cut in 1/2″ pieces)
  • 1 pound portobello mushrooms (– brushed clean, stemmed and cut in 3/4″ pieces)
  • 3/4 teaspoon sea salt
  • 1/8 teaspoon ground cayenne
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons canola oil (or grapeseed)
  • 4 kaiser rolls (regular or whole-)
  • 4 ounces cheese (Emmental, Emmentaler or Swiss cheese – thinly sliced)
  • 1 beefsteak tomato (large, – cut crosswise in 4, 3/8″ slices)
  • 1/3 cup aioli (homemade, garlic mayonnaise – see Viviane’s tip)
  • 1 handful arugula leaves (baby, or baby spinach)
