  • 4 apples (medium green-skinned, 1 1/3 lbs)
  • 6 tablespoons butter
  • 1/4 cup firmly packed brown sugar
  • 1 1/3 pounds rhubarb (coarsely chopped, about 4 medium stalks)
  • 2 tablespoons orange juice
  • 2 cups corn flakes (crushed slightly)
  • 1/2 cup shredded coconut
  • 2 tablespoons plain flour

Directions

  1. Preheat oven to 350°F.
  2. Peel and core apples; cut into thick wedges. Melt 1 tbsp butter in large saucepan; sauté apples and 1/4 cup sugar until sugar dissolves and apple just starts to caramelize. Add rhubarb and orange juice; cook, stirring, until rhubarb is tender. Transfer mixture to 6-cup ovenproof dish.
  3. Combine corn flakes, coconut, remaining sugar and flour in large bowl. Using fingers, rub remaining chopped butter into crumble mixture.
  4. Spoon crumble mixture evenly over top of apple rhubarb mixture; bake, in oven, about 15 mins or until crumble is golden-brown. Serve with vanilla ice-cream, if desired.
