Ingredients

  • 3 cups lettuce (washed and chopped into bite-sized pieces)
  • 1 apple (cored and sliced)
  • 2 tablespoons dried blueberries
  • 2 teaspoons peanut butter
  • 2 lemons
  • 2 teaspoons olive oil

Directions

  1. Place the lettuce, slices of apples, and blueberries in a salad bowl
  2. Put the peanut butter, lemon juice, and olive oil into a food processor and puree until smooth.
  3. Pour this mixture onto the salad and serve on a plate.

This is one of my favorite luncheon salads. It’s light and crunchy and the peanut butter gives it some protein. I like to vary the apples I use from tart granny smiths to sweet, honey crisps. Sometimes I use pear slices in this as well.
