The pound cake got its name from the amount of each ingredient required for the cake. This recipe for Apple and Mascarpone Pound Cake should really be called a half pound cake, but even with half the ingredients it is absolutely delicious. Full of rich sweet and tart apple flavor, this cake has the perfect density and a light vanilla flavor throughout. Bake time is 45 minutes. Make sure you beat the eggs and sugar together until frothy.

Ingredients

  • 4 eggs
  • 250 grams granulated sugar
  • 250 grams mascarpone cheese
  • 250 grams flour
  • 1 vanilla beans (or 2 tsp. vanilla extract)
  • salt
  • 2 teaspoons baking powder
  • 2 apples (large, golden delicious)

Directions

  1. Preheat the oven to 170C.
  2. Peel the apples and slice them, not too thinly.
  3. Beat the eggs with the sugar until light and foamy, approximately 10 minutes.
  4. Add the mascarpone cheese, the vanilla seeds, and a pinch of salt.
  5. Sift the flour with the baking powder and add it to the batter by folding it in carefully.
  6. Butter and flour a bundt pan and pour the batter inside.
  7. Cover the surface with the sliced apples, pressing them lightly into the batter.
  8. Bake for approximately 45 minutes.
  9. Remove the cake from the oven and let it cool.

I have dabbled in the art of making pound cake for several years now and found this recipe to be an absolute delight. It had the perfect density for a pound cake and you could really taste the tart and sweetness of the apple. Giving this recipe 5 stars and will be making it again next week.
