- 2 chicken breasts (pounded)
- 1/2 granny smith apple (thinly sliced)
- 3 Tbsp. cream cheese
- salt and ground black pepper
- 1 Tbsp. olive oil
- 2 cups macaroni (or other similarly shaped pasta, cooked al dente, with some cooking liquid reserved)
- 2 Tbsp. cream cheese
- 2 Tbsp. half-and-half
- 1/4 cup lowfat milk
- 2 tsp. mustard
- salt and ground black pepper

Directions
- Salt and pepper the chicken breasts. Place the apple slices on top of each and spread with cream cheese.
- Roll up each chicken breast, using toothpicks to keep closed.
- Saute in olive oil on medium heat until golden brown on all sides and cooked through.
