Ingredients

  • 2 chicken breasts (pounded)
  • 1/2 granny smith apples (thinly sliced)
  • 3 tablespoons cream cheese
  • salt and ground black pepper
  • 1 tablespoon olive oil
  • 2 cups macaroni (or other similarly shaped pasta, cooked al dente, with some cooking liquid reserved)
  • 2 tablespoons cream cheese
  • 2 tablespoons half & half
  • 1/4 cup low-fat milk
  • 2 teaspoons mustard
  • salt and ground black pepper

Directions

  1. 1Salt and pepper the chicken breasts. Place the apple slices on top of each and spread with cream cheese.
  2. 2Roll up each chicken breast, using toothpicks to keep closed.
  3. 3Saute in olive oil on medium heat until golden brown on all sides and cooked through.
  4. 4Remove from skillet and set aside for 5 minutes. Remove the toothpicks and slice into diagonals.
  5. 5Blend the cream cheese, half and half, milk, mustard, salt, and pepper together in the blender.
  6. 6Add the cream sauce to the pasta with a little of the reserved cooking liquid.
  7. 7Place the pasta onto serving dishes and top with the chicken slices.
