Cut into squares like brownies, these apple and coffee squares pair wonderfully with a morning cup of coffee. Made with fresh apple slices, this coffee cake uses brewed coffee as a wet ingredient for a richer flavor. Stiffly whisked egg whites add a lightness to the texture of the cake leaving you with a fluffy, moist cake. Sprinkle with powdered sugar and garnish with chopped nuts or a sprig of mint for an attractive finish.

Ingredients

  • butter (for greasing)
  • 3 apples (–4 small)
  • 200 grams sugar
  • 200 grams butter (at room temperature)
  • 2 eggs (separated)
  • 100 grams flour
  • 1 teaspoon baking powder
  • 100 grams cornflour
  • 1 cup coffee (strong)

Directions

  1. Pre-heat the oven to 170C.
  2. Grease and line a baking pan, 20 cm x 20 cm.
  3. Peel and core the apples, cut into slices, and set aside.
  4. Beat the sugar with the butter until light.
  5. Add the egg yolks and mix well.
  6. Add the flour, cornflour, baking powder, and cold coffee and mix all the ingredients together thoroughly.
  7. Add the apples and mix again.
  8. Whisk the egg whites until stiff and gently fold into the mixture.
  9. Transfer to the baking pan and cook for 30–40 minutes or until golden brown and a toothpick inserted in the center comes out clean.
