Say hello to the beginning of autumn with this apple and butternut squash crumble that is simply full of seasonal flavors. Diced apples and squash are tossed with cinnamon and topped with a buttery brown sugar crumble topping and baked to golden brown perfection. Ready in an hour, the end result is a caramelized filling with a crunchy buttery topping that will pair well with your favorite ice cream or custard.

Ingredients

  • 2 apples
  • 1/2 cup butternut squash
  • 1 cup oatmeal
  • 1/4 cup brown sugar
  • 1 tablespoon flour
  • 50 grams butter
  • cinnamon

Directions

  1. Preheat oven to 350º F (180º C).
  2. Peel, skin, and remove seeds from the apples.
  3. Dice the apples, sprinkle with cinnamon and drop them on the bottom of a pie plate. Do the same thing with the squash.
  4. In a large bowl, mix the flour, oats, sugar, and butter until you get a sandy consistency.
  5. Put the crumble over the apple/squash mixture.
  6. Bake for about 35 minutes or until the apples are caramelized and the crumble is golden.

We have a new crumble on our lists of favorite desserts. The only thing I changed was to put a scoop of vanilla ice cream on top of each serving as it cooled allowing it to melt into the oatmeal topping.
