Description

You won’t want a sandwich. This bread is best straight from the oven, with butter melted in. It won’t last long, as the whole family will devour it with gusto. Use it to complement any meal. The whole wheat is packed with plenty of vitamins and minerals. The apples give it just a hint of sweetness.

Ingredients

375 grams wheat flour
250 grams apples (based yeast, See Apple-based Yeast recipe)
8 grams fine salt
185 grams water

Directions

1Pour all the ingredients into a food processor.
2Knead on medium speed for 7 or 8 minutes to get a smooth paste. (If you do not have a food processor, you can knead the mixture by hand.)
3Place the dough on a floured baking surface, and form a ball.
4Transfer to a lightly oiled bowl, cover with plastic wrap, and allow to rest for 5 hours.
5Return the dough to your work surface, and give it the desired shape such as a ball, or a long loaf.
6Place the bread in a proofing basket covered with a lightly floured tissue (or gently fold into a floured cloth).
7Allow to rise for 10 to 13 hours in a 20/24°C moderate climate covering the basket with a plastic bag.
8Preheat oven to 200°C (390°F).
9Gently transfer the bread on a baking sheet covered with greaseproof paper, and bake for 30-35 minutes.
