Yum! Mine turned out a little soft because my apple was a little big and I went ahead and just used the whole thing, but the flavor was so great. The batter spreads out a lot when baking, even after an hour of chilling, so give the cookies plenty of room on the baking sheet. Made these for a small gathering and each person ate several cookies - there were none left by the end of dinner.
