  • 2/3 cup raisins
  • 2 tablespoons spiced rum (or dark)
  • 2 cups whole milk
  • 4 large eggs
  • 1 cup sugar
  • 3 tablespoons unsalted butter (melted and slightly cooled)
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla
  • 4 cups challah (packed, or brioche cubes, from one loaf with crust removed, you won't use entire loaf)
  • 1 baking apple (large tart, such as Granny Smith, peeled, cored, cut into 1/8-inch slices and then cut in half)

Yummy! Made a banana rum raisin bread pudding based on what I had in the cupboard. Subbed 1 1/4 cup reduced fat milk and 3/4 cup heavy cream for 2 cups whole milk. Used 3 ripe bananas instead of apples and used 3 eggs. Subbed 1/3 cup maple syrup for sugar. Cinnamon and vanilla extract were doubled. Topped bread pudding with syrup made of 1 banana and 1/4 cup maple syrup. This would make a great autumn dessert!

My wife and 5 year old son loved it! It wasn't super sweet tasting. Nice and light. I made a half recipe because I don't eat a lot of sweets. I also used store bought italian bread because it will go bad if I don't use it fast enough. I don't eat many sandwiches.
