Apple pie with a sweet twist. This custard cream apple pie combines the best elements of a custard pie with an apple pie. This recipe was written with directions for preparation in a Thermomix.

Ingredients

  • 1 base (puff pastry)
  • 3 apples (cut in thin slices)
  • almond flakes
  • ground cinnamon (to taste)
  • brown sugar (to taste)
  • 500 milliliters milk
  • 3 egg yolks
  • 120 grams sugar
  • 50 grams margarine (softened)
  • 50 grams custard (flour)

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Spread dough in the pie mold, prick the bottom with a fork. Set aside.
  3. Reserve.
  4. Prepare the cream for the filling.
  5. (I used the Thermomix machine, at the link of the original recipe you can view how it is done in the traditional fashion).
  6. Place all ingredients in the cup of the cream and beat for a few seconds in speed 4. Then program 7 min., Temp. 90 speed 4. While the cream is cooking, peel the apples and place the well distributed slices over the puff pastry. Sprinkle generously with cinnamon.
  7. Place the cream filling over the apples and distribute the flaked almonds over it , sprinkling with brown sugar and cinnamon. Bake for about 25 minutes until the pastry is golden brown. Remove and let it cool.

I used a dry white wine with these cream puffs the first time I tried them then a sweet white the next time. The wine definitely has an influence on the overall taste of the puffs. I have also brushed them with a simple sugar glaze made of sugar and water that is heated until blended and thickened.
