  • 4 boneless pork chops (3/4-inch thick)
  • 1/4 teaspoon ground black pepper (coarse)
  • 1 teaspoon vegetable oil
  • 1/4 cup apple juice
  • 2 tablespoons apple jelly
  • 2 tablespoons dijon style mustard

    Directions

    1. Season chops with pepper. Heat oil in large nonstick skillet over medium-high heat; brown chops 2 minutes on one side. Turn chops; add apple juice, jelly and mustard to skillet. Reduce heat to low, cover and cook 5-6 minutes. To ensure doneness, check with a meat thermometer. A thermometer inserted into the thickest part of the chop should produce a temperature of 145 degrees Fahrenheit, followed by a 3-minute rest time.
