  • 2 apples (peeled, cored, cut into wedges)
  • 1/4 cup heavy cream
  • 1/3 cup sugar
  • 1/3 cup ground almonds
  • 1 large egg
  • 2 teaspoons cornstarch
  • 1/2 teaspoon vanilla bean paste
  • powdered sugar (for dusting)
  • whipped cream (to serve)
  • 2 1/2 cups all purpose flour
  • 2 tablespoons sugar
  • 9 tablespoons unsalted butter (chopped)
  • 1/4 cup water
  • 1 egg yolk
  • 1 tablespoon lemon juice

Directions

  1. Preheat oven to 375°F. Lightly grease a 4 x 12 inch tart pan.
  2. To make the tart dough, sift flour into large bowl. Stir in sugar. Rub in butter until mixture resembles breadcrumbs. Add water, egg yolk and juice and mix to a pliable dough.
  3. Knead gently on a lightly floured surface. Wrap in plastic wrap and chill for 30 mins.
  4. Roll out between two sheets of parchment paper. Ease into the prepared pan, trim edges. Chill for 10 mins.
  5. Line tart dough with parchment paper and fill with baking beans. Bake blind for 10 mins. Remove paper and beans. Bake for 10 mins.
  6. To make filling, arrange apples on the crust. In a bowl, whisk together all the remaining ingredients.
  7. Pour egg mixture over apples. Bake for 40-45 mins, until set. Dust with powdered sugar and serve with whipped cream.
