These were delicious and oh so moist! I mean melt in your mouth moist. I also had an issue with the streusel though. Soon as I added the melted butter it went all runny and doughy. Never could get it crumbly like the recipe states. I guess what I think of as crumbly is where I'm able to sprinkle it but this recipe was more like dropping globs on top of the muffins and maybe that's what you're supposed to do. I have another recipe that calls for cold butter not melted. That one I can literally sprinkle on top. I literally added another half cup of flour to the streusel just to get it to a consistency I could put on top of the muffins and honestly they did turn out pretty good. Next time I might try the streusel as is and drop the globs on the muffins to see what happens. Also the glaze was WAY too "watery" for me. Mines was literally the color of grey water. I remember thinking before I made it that 3 tbs of milk seemed like a lot but still followed the recipe. I threw that glaze out and made more, this time with only 2 tbs of milk and it was the perfect consistency for what I was looking for. I would suggest starting with 1 tbs of milk and adding half tablespoons until you get to the consistency you like. Despite these things this recipe is definitely a keeper and I'll be adding this one to my recipe book.

These were really yummy but I couldn't find what the quantity of the vanilla was that went into the sour cream/egg mixture so just put in a teaspoon. Also when I put my melted butter into the streuesel mixture at the end it just went all runny. I drizzled it over the muffin mixture anyway and still turned out OK. I did wonder if it was because my steuesel mixture was nutless as my husband doesn't eat nuts. I also couldn't see how to prepare the apples so just peeled and chopped into small cubes to stir in. Seems my printout missed off the "peeled & chopped" bit that I've just now seen. I decided they would be sweet enough and as my streuesel topping wasn't quite right left off the drizzled icing.
Definitely one to save and make again despite all of the above. Thanks for a great recipe.
