Everything we love about baked apples in a light cookie. These apple clouds have a fluffy texture that contrasts well with the slight crisp texture of the apples. The perfect balance of sweetness makes these cookies an instant fall favorite.

Ingredients

  • 2 eggs
  • 80 grams sugar
  • 1/2 teaspoon vanilla extract
  • 100 grams butter (at room temperature)
  • 260 grams flour
  • 1 teaspoon baking powder
  • 3 peeled apples (cored, and cut into small pieces)
  • powdered sugar (for sprinkling)
  • cinnamon (for sprinkling)

Directions

  1. Preheat oven at 200 degrees Celsius.
  2. Prepare a non-sticking baking tray.
  3. Beat the eggs with the sugar and the vanilla extract until you get a whitish mixture.
  4. Add the butter and beat again.
  5. Add the flour and baking powder, and mix well.
  6. Add the apples, and mix well. The apple should be evenly distributed in the dough.
  7. Spoon onto the baking tray with 2 to 3 centimeter spaces between the cookies.
  8. Bake for about 10 minutes, making sure that it doesn't get dry.
  9. Remove from oven, and cool on a rack. When cooled, sprinkle abundantly with powdered sugar and cinnamon.

Clouds are a great way to describe these cookies. This recipe leaves them light and fluffy, as long as you follow the instructions for the dough and take them out of the oven after ten minutes of baking. They have a delicious, crisp apple taste with a nice amount of sugar and sweetness. The powdered sugar and cinnamon give it that perfect topping to make these taste like a baked apple.
