Apple Cinnamon Muffins from the Daily Bread

  • 20 grams butter
  • 20 grams ground hazelnuts
  • 20 grams flour
  • 20 grams powdered sugar
  • 420 grams whole wheat flour
  • 20 grams baking powder
  • 10 grams cinnamon
  • 5 grams salt
  • 400 milliliters apple juice
  • 150 grams agave syrup (or honey)
  • 1 egg
  • 80 milliliters sunflower oil
  • 3 apples


  1. Preheat oven to 350F.
  2. Grease and flour a muffin pan with 12 cups.
  3. In a small bowl, mix the butter, hazelnuts, flour, and sugar to a crumble with your fingertips. Set aside
  4. In a large bowl, mix the flour, baking powder, cinnamon, and salt. Set aside.
  5. In another bowl, whisk the apple juice, agave syrup, egg, and oil together. The syrup must be fully dissolved .
  6. Combine the liquid with the flour mixture, mix quickly with a wooden spoon to get a smooth batter.
  7. Wash and cut the apples into strips, and add them to the mixture.
  8. Divide the batter into the 12 muffin pans. Place a little bit of crumble on top of each muffin.
  9. Cook for about 15 minutes.

I followed this recipe to the tee but had to make a few changes to turn them into these muffins. I had to add an extra cup of juice since wheat flour just soaks up the liquid and after I added the liquid suggested by the recipe, I had a hard dough instead of the batter. I also had to bake them for 22 minutes since they were doughy after 15 minutes. Delicious while they are hot.
