Description

These muffins will brighten any morning. Their moistness will surprise you. Filled with chunks of apple and just a hint of cinnamon, they will most likely be eaten while they are still hot. For an added twist of rich, creamy flavor, serve with butter.

Ingredients

85 grams flour (whole-grain)
70 grams all-purpose flour (white)
7 grams baking powder
salt
1 tablespoon ground cinnamon (plus more for sprinkling)
40 grams sugar
1 apples (; peeled, cored, and chopped)
125 milliliters milk
1 eggs
60 grams butter (melted)
1 tablespoon brown sugar

Directions

1Preheat the oven to 200 degrees Celsius.
2Sift together the whole-grain flour, white flour, baking powder, a pinch of salt, the ground cinnamon, and the sugar.
3Add the apple.
4In another bowl, mix together the milk, egg, and butter.
5Mix the wet ingredients into the dry ingredients until fully absorbed.
6Fill muffin tins 3/4 of the way up and sprinkle ground cinnamon and brown sugar on top.
7Bake for 20-22 minutes or until a toothpick inserted into the center comes out clean.
