Apple Cider Vinegar-pickled Tuna

Description

Coated with salt and pepper the tuna brings a salty flavor to the dish. The apple cider vinager compliments the tuna, but adds a tart flavor. Adding caramelized onions, carrot, garlic and bay leaves, brings a colorful element to this recipe, which can be enjoyed as an appetizer at any event.

Ingredients

1 kilogram tuna fillets
salt
ground black pepper
flour
olive oil
2 onions
2 carrots
4 garlic cloves
4 bay leaves
12 peppercorns
1/4 liter apple cider vinegar
1/2 liter fish stock
water

Directions

1Add the tuna to a bowl. Season the tuna with salt and black pepper. Coat with flour and set aside.
2Add some olive oil to a skillet on medium heat. Mash the garlic into the oil and remove. Raise to high heat and sear the tuna pieces on all sides.
3Remove the tuna and set aside.
4In the same oil, add the onion, carrot, garlic, bay leaves, and peppercorns and fry until the mixture starts to caramelize.
5Add the vinegar and simmer 2 minutes. Add the fish stock and small amount of water. Cook on medium heat for about 10 minutes.
6Lower the heat to low and add the tuna. Cook for about 3 minutes. Serve warm.
