Description

The dawning of fall weather and changing leaves calls for apple desserts and lots of them. This apple cake is made without butter but combines the warm flavors of honey, brown sugar, cinnamon, and fennel for a flavor and texture that will surprise and delight you.

Ingredients

  • 4 apples (medium, finely chopped)
  • 1 lemon juice
  • 1/2 cup port wine
  • 200 grams brown sugar
  • 1 tablespoon honey
  • cinnamon (to taste)
  • fennel (to taste)
  • 4 eggs
  • 1/2 cup oil
  • 3 cups flour
  • 1 teaspoon baking powder

Directions

  1. 1Cut the apples into small pieces, and place in a bowl. Sprinkle with lemon juice and port wine. Add sugar, honey, cinnamon, and fennel. Mix well, and refrigerate for 30 minutes.
  2. 2Preheat the oven to 180 degrees Celsius.
  3. 3Grease a round cake pan with margarine, and sprinkle with flour. Set aside.
  4. 4Beat the eggs with the oil. Add to the apple mixture, and mix very well.
  5. 5Add the flour and baking powder, and mix well, without whipping.
  6. 6Place the dough in the cake pan, and bake for about 40 minutes.
  7. 7Check the cooking, remove from the oven, and unmold.
