Ingredients

  • 5 eggs
  • 80 grams caster sugar (granulated)
  • 20 grams honey
  • 20 grams corn starch
  • 1 teaspoon Espelette Dukkah pepper
  • 200 grams dark chocolate
  • 150 grams butter (soft)

Directions

  1. 1Preheat oven to 160 degrees Celsius.
  2. 2Separate egg whites from yolks.
  3. 3Whisk the egg whites up to firm peaks.
  4. 4In a bowl beat the egg yolks with granulated sugar until the mixture is frothy and doubles in volume.
  5. 5Add honey, cornstarch, and Espelette pepper.
  6. 6Mix well.
  7. 7Melt the chocolate and butter in a microwave or a pan. Add to the preparation.
  8. 8Gently add the egg whites in by lifting the mass with a spatula.
  9. 9Pour into a buttered pan or silicone mold.
  10. 10Bake for 30 minutes.
  11. 11Leave to cool before unmolding.
