  • 2 onions (medium, diced, about 3 cups worth)
  • 6 cloves garlic (minced, about 2 tablespoons worth)
  • 3 large carrots (peeled and diced, about 2 cups worth)
  • 3 celery stalks (large, and leaves, diced, about 2 cups worth)
  • 4 cups chicken (cooked, chopped, mix of white and dark meat, a rotisserie chicken works great!)
  • 6 cups low sodium chicken broth (or chicken bone broth)
  • 3 bay leaves
  • 1 teaspoon dried sage
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon sea salt (plus more to taste)
