- 12 large egg whites (12 egg whites = 408 g, at room temperature)
- 1 1/2 tsp. cream of tartar (1 1/2 tsp. = 4.24 g)
- 1/4 tsp. fine sea salt (1/4 tsp. = 1.5 g)
- 1 1/2 tsp. pure vanilla extract (1 1/2 tsp. = 3.1 g)
- 1 cup cake flour (1 cup = 102 g)
- 1 1/2 cups heavy whipping cream (1 1/2 cups = 360 mL)
- 2 Tbsp. dark brown sugar (2 Tbsp. = 24 g, packed)
- 1 1/2 Tbsp. marsala wine (1 1/2 Tbsp. = 22.5 mL)
- 1/2 tsp. pure vanilla extract (1/2 tsp. = 1 g)
- 1 pt. Fresh berries (1 pint = 340 g)

Directions
- Position an oven rack in the center of the oven and preheat the oven to 375ºF/190ºC/gas 5. Have ready a two-piece angel food cake pan. (Do not grease the pan—angel food cakes need to cling to the sides of the pan to keep the loft.
- Attach the KitchenAid® Sifter + Scale Attachment to your KitchenAid® Stand Mixer fitted with the wire whip. With the ingredient valve in the closed position, weigh ONLY 150 g/5.3 oz (3/4 cup) of the sugar in the ingredient hopper.
- Put the egg whites, cream of tartar, and salt in the mixing bowl. With the mixer on medium-low speed, beat the egg whites until foamy, and then increase the speed to medium-high and beat the egg whites until they form soft peaks, about 2 minutes.
