Bring the flavors of a typical Andalusian dessert to your table with this recipe for Andalusian Arroz con Leche, or Andalusian Rice Pudding for those who do not speak Spanish. Thick and creamy, this rice pudding is made with whole milk for a richer, thicker texture. Sweetened with honey and spiced with cinnamon, this rice pudding is a creamy dessert that is easily adjustable in flavor to fit your personal tastes. Soak the rice overnight before making this pudding for best results.

Ingredients

  • 200 grams rice
  • 1,500 milliliters whole milk
  • 1 cinnamon stick
  • 175 grams honey
  • ground cinnamon
  • melted butter (to taste)

Directions

  1. Soak the rice in water overnight. Drain.
  2. Place the rice in a pan along with the milk and cinnamon stick and cook for 45 minutes, stirring every so often. Add the honey and continue to cook for 20 minutes, stirring every so often.
  3. Once the rice is cooked and creamy, taste it, adding more sweetener if necessary. Remove from the pan and place into a bowl, then cover and let cool.
  4. Sprinkle with cinnamon and drizzle with melted butter before serving.

There is nothing more satisfying than a good tasting rice pudding recipe and this recipe sure hit the spot. My husband loved it and he normally hates rice pudding. It was thick and creamy with a sweetness to it that left your tastebuds wanting more. I plan to make this recipe again tomorrow and would definitely give this recipe 5 stars.
