Skip the chips. This recipe will deliver the salty tanginess of vinegar mixed with salt. Garlic provides a nice surprise, helping to enhance the flavor of the fish. Makes for an excellent snack between meals as well as a great Hors d’Oeurves.

Ingredients

  • 1 kilogram anchovies
  • vinegar
  • salt
  • garlic
  • parsley
  • oil

Directions

  1. Rinse the anchovies and remove the backbones. Place in a bowl and cover with water. Add a tablespoon of salt. Stir well and set aside for 30 minutes
  2. Drain the anchovies and rinse. Place in a bowl and cover with vinegar. Refrigerate for approximately 1 day.
  3. Remove from refrigerator and drain excess vinegar. Add garlic, parsley, and olive oil.
