- 2 slices bread (wholegrain)
- 150 grams turkey pastrami (cut into thin slices)
- 1 tomato (thinly sliced)
- 2/3 cup fresh basil
- 5 walnuts
- 3 tablespoons olive oil
- 2 tablespoons parmesan cheese (grated)
- salt and ground black pepper
- cheese (Melting, such as mozzarella)
Directions
- Toast the bread.
- Grind the basil, nuts, parmesan cheese, and olive oil together in a food processor. Season with salt and pepper.
- Spread one slice of bread with the pesto and top with pastrami slices. Layer with the tomato slices and sprinkle with cheese
- Broil until the cheese melts. Serve.

This was one of the best sandwiches I have had in a long time. It was definitely worthy of making again… and again. I never seem to think to add pesto to my sandwiches, and often only use it in pasta. I am so glad I came across this recipe. I will absolutely make this again.
