The secret to the better taste from just pieces of grilled chicken is that the chicken bakes in one piece and all the juices and good taste can combine together to a very good tasting result.

    Directions

    1. Pre heat your oven on grill at 210 C and insert the roasting pan now what you will be using for your chicken. Ensure your pan is big enough to accommodate your chicken, potatoes, carrots and onions.
    2. Now you start with the hardest thing and that is to remove the spine from the chicken. After this all steps are easy to follow and make. You can ask your butcher to do so if you are not confident enough but with meat scissors or a knife you will be done in less than a minute. First make a long cut from neck to back on one side of the spine and then on the other side of the spine. You can use the spine to make some chicken stock what you can later use as a base for a soup or freeze for the time you will need it. With removing the spine you have cut down the baking time of the chicken and also making it bake more evenly.
    3. It is time to add all the ingredients on the chicken and rub it all in. Give your chicken a well deserved massage and ensure all is well spread.
