Five ingredients, 50 minutes and 550 calories. These Amarante Rockets will soar off the plate once you add them to the menu of any party, brunch or dinner. Kids will want them as an after school snack and how can they be denied? Sugar, eggs, almond flour and sheet wafers are all you need to bring these yummy treats to the table. But why not add some powdered sugar to put them over the top?

Ingredients

  • 250 grams sugar
  • 8 egg yolks
  • 1 egg
  • 125 grams almond flour
  • 1 sheet wafer (paper)

Directions

  1. Boil the sugar with a little bit of water, stirring constantly to thicken, until it reaches the hard-ball stage. At this point, the syrup will form thick, "ropey" threads as it drips from the spoon.
  2. Add the almond flour, and cook until thickened.
  3. Remove from heat, and cool completely.
  4. Add the eggs, stir well, and put back on low heat, stirring constantly, to cook the eggs.
  5. Cut the wafer sheet into 6 centimeter squares, and with a cloth soaked in cold water, moisten each one individually.
  6. Fill each one with the almond mixture, and roll up into a cigar shape.
  7. Sprinkle with powdered sugar.
  8. Serve.

These are so good with just a pure almond flavor. I did burn my sugar the first time, so be careful. You have to keep watch on your pan. Once I got the sugar cooked properly, the rest was easy. They were perfect with a cup of tea in the afternoon.
