Description

Baking chicken and aromatics in foil (or parchment paper) packets is a low-fat way to ensure the lean meat is juicy and flavorful after cooking. Here, the chicken is combined with cherry tomatoes, red onion, garlic, basil, rosemary, and sage, with just a drizzle of olive oil and a splash of white wine as flavor carriers. Let the chicken marinate in the packets for an hour before cooking, for best results.

Ingredients

  • 4 chicken pieces (thighs, or breast)
  • 8 cherry tomatoes (vine-ripened, sliced)
  • 1 red onion (medium, sliced into thin rounds)
  • 2 garlic cloves
  • basil
  • rosemary
  • sage
  • extra-virgin olive oil
  • salt and ground black pepper
  • white wine

Directions

  1. Prepare 4 large sheets of aluminum foil.
  2. Chop the sage, the rosemary, the basil, and the garlic and sprinkle this mixture on the sheets.
  3. Place one piece of chicken on each sheet and top the chicken with the tomato and onion slices.
  4. Drizzle with the oil and the wine.
  5. Season to taste with salt and pepper.
  6. Carefully seal the chicken completely in the aluminum foil.
  7. Set the chicken aside for 1 hour to marinate.
  8. Preheat the oven to 190C.
  9. Bake for approximately 40 minutes.
  10. Remove the chicken from the oven and serve hot.
