  • 1 ham hock (or smoked pork shank)
  • 5 pounds sauerkraut (good-quality store-bought or homemade, drained)
  • 1 1/2 pounds sausages (mixed French- and/or German-style, More traditional varieties might include: frankfurters, bratwurst, boudin blanc, boudin noir, or knockwurst)
  • 2 pork chops (smoked, confirm they’re fully cooked)
