The best part is that it only takes 40 minutes to prepare, so you don’t have to slave over it for hours. Why wouldn't you want to try a cake that combines sweet and savory ingredients to make a decadent and bold dessert that everyone will love.

Ingredients

  • 50 grams butter (softened plus extra to grease the pan)
  • 100 grams sugar
  • 80 grams quince paste (you can substitute fig jam)
  • 3 large eggs (separated)
  • 1/2 lemon
  • 1 teaspoon ground cinnamon
  • 75 grams cake flour
  • 125 grams ground almonds
  • apricot jam

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Grease an 18 by 28 centimeter cake pan.
  3. Cream the butter and sugar together until lighter in color.
  4. Add in the quince paste, egg yolks, lemon zest, and cinnamon. Mix well.
  5. Add in the sifted flour and ground almonds. Mix again.
  6. Separately, in a bowl whisk the egg whites into stiff peaks. Carefully fold them into the first mixture.
  7. Bake 10 minutes until golden.
  8. Baste the top with some apricot jam melted with a splash of water.
