Moist and dense, you will simply fall in love with this Almond and Pear Cake, a perfect cake for the autumn or winter season. Each bite is full of sweet pear flavor and the sweet nutty flavor of almond. The addition of rum provides this cake with a warm flavor that seeps into each bite. Made with raw sugar, this cake is a healthier dessert option. The batter is made from a combination of almond and wheat flours.

Ingredients

  • 60 grams almond flour
  • 160 grams flour
  • 2 eggs
  • 80 grams butter (cut into pieces and at room temperature)
  • 160 grams powdered sugar
  • 2 pears (small)
  • 1 teaspoon baking powder
  • 2 tablespoons rum

Directions

  1. 1Beat the butter with the raw sugar until light and foamy.
  2. 2Add the eggs, one at a time.
  3. 3Add the rum, the flour, and the almond flour.
  4. 4Add the sifted baking powder and mix well.
  5. 5Line a 22 centimeter cake pan with wax paper and add the batter.
  6. 6Peel the pears and slice them not too thinly, add the prunes, pressing them into the batter.
  7. 7Bake at 175C for approximately 50 to 60 minutes.
  8. 8Remove the cake from the oven, let it cool completely and sprinkle it with powdered sugar.
