Each bite is full of sweet pear flavor and the sweet nutty flavor of almond. The addition of rum provides this cake with a warm flavor that seeps into each bite. Made with raw sugar, this cake is a healthier dessert option. The batter is made from a combination of almond and wheat flours.

Ingredients

  • 60 grams almond flour
  • 160 grams flour
  • 2 eggs
  • 80 grams butter (cut into pieces and at room temperature)
  • 160 grams powdered sugar
  • 2 pears (small)
  • 1 teaspoon baking powder
  • 2 tablespoons rum

Directions

  1. Beat the butter with the raw sugar until light and foamy.
  2. Add the eggs, one at a time.
  3. Add the rum, the flour, and the almond flour.
  4. Add the sifted baking powder and mix well.
  5. Line a 22 centimeter cake pan with wax paper and add the batter.
  6. Peel the pears and slice them not too thinly, add the prunes, pressing them into the batter.
  7. Bake at 175C for approximately 50 to 60 minutes.
  8. Remove the cake from the oven, let it cool completely and sprinkle it with powdered sugar.

The moment I tasted this recipe I instantly fell in love with it. The cake was extremely moist and had the ideal density that I prefer. It was rich with pear flavoring and the twist of almond really made it taste wonderful. I would give this recipe a 5 star rating and plan to make it several more times.
